== Glutathione == As the key substrate in GST-mediated reactions, glutathione is one of the most conserved reducing agents in bacterial cells. In its reduced form, glutathione plays a key role in the regulation of reactive oxygen species (ROS) in the cell. ROS are specific to aerobic cells and are usually produced in their metabolic processes. They function to maintain a dynamic balance under normal conditions, acting as intracellular and extracellular signaling molecules. The regulation of levels of ROS, levels of oxidized and reduced glutathione and other thiols, and antioxidant enzymes (such as GSTs and glutathione reductase) are important in determination of the most stable conditions for redox control, or for activation of apoptosis. Glutathione reductase is another enzyme that helps maintain cellular redox homeostasis by maintaining the supply of reduced glutathione. Without glutathione in its reduced form, glutathione transferases are not able to utilize it as a substrate in redox reactions. Glutathione contains a significant amount of cysteine residues, which contributes to its nature of being readily oxidized. The -SH groups on these residues act as strong nucleophiles, which can conjugate with a variety of molecules, including other glutathione molecules. === Potential adverse effects === Cases of severe allergic reactions to buckwheat and buckwheat-containing products have been reported. Buckwheat contains fluorescent phototoxic fagopyrins. These can cause fagopyrism in people with diets based on high consumption of buckwheat sprouts, and particularly flowers or fagopyrin-rich buckwheat extracts. Symptoms of fagopyrism in humans include skin inflammation in sunlight-exposed areas, cold sensitivity, and tingling or numbness in the hands. Dogs can develop keratoconjunctivitis sicca (KCS), a form of dry eye which can lead to blindness if untreated. In the U.S., the presence of buckwheat in cereal grain is considered an economic threat, since many people in the Asian markets are allergic to it. Grain elevators hence have a zero tolerance policy, and contaminated loads of grain are summarily rejected. Buckwheat allergy is especially common in Japan, where it is the fourth most frequent cause of food-related anaphylaxis.
== Production == Very few chemical oxidants are strong enough to convert chlorate to perchlorate. Persulfate, ozone, or lead dioxide are all known to do so, but the reactions are too delicate and low-yielding for commercial viability. Perchlorate salts are typically manufactured through the process of electrolysis, which involves oxidizing aqueous solutions of corresponding chlorates. This technique is commonly employed in the production of sodium perchlorate, which finds widespread use as a key ingredient in rocket fuel. Perchlorate salts are also commonly produced by reacting perchloric acid with bases, such as ammonium hydroxide or sodium hydroxide. Ammonium perchlorate, which is highly valued for high performance rocket propellants, can also be produced via an electrochemical process. Perchlorate esters are formed in the presence of a nucleophilic catalyst via a perchlorate salt's nucleophilic substitution onto an alkylating agent.
